Mediterranean Whole Wheat Pasta Salad

Most pasta salads are just pasta salads…until you meet this one. Using the fresh flavours of the Mediterranean and whole wheat rotini for the pasta, this salad sings a wonderful ballad.
Directions
- Cook the rotini as per the instructions on the box and then run under cold water to stop the cooking process. Strain all the excess water and then transfer to a mixing bowl.
- Place the sun-dried tomatoes in a bowl. Heat a ½ cup of water to boiling or almost boiling and then pour over top the sundried tomatoes and let them sit for about 10 minutes to soften up.
- Remove the tomatoes from the water and then carefully slice them. Add to the mixing bowl with the pasta along with the feta cheese, spinach and red onion. Toss to combine.
- Now add the oil and vinegar and then season to your liking with the salt and pepper. Toss again. Pasta is now finished…eat and enjoy or refrigerate for later.
Variations
- You can add any extra or replacement veggies that you like to this salad. Shredded carrot, chopped cauliflower, sliced red pepper, sautéed zucchini are all great examples.
