Mason Jar Salad with Lemon Chia Dressing

This is a fun way to bring lunch on the go and you can really tantalize your taste buds looking at the mason jar while you wait for lunch. The dressing is a lovely and nutritious option that you can use as a go-to dressing again and again.

  1. Add the lemon zest, juice, garlic, chia seeds, walnuts, basil and salt to a blender.  Turn the blender on and puree the ingredients and then slowly add the olive oil until you get your desired dressing consistency.
  2. If you have made the dressing ahead of time and are using it from the fridge, it may need to be warmed a touch before you can add it to your salad.  5 seconds in the microwave should do the trick.
  3. Layer your salad ingredients in a large mason jar alternating colours for the best presentation.
  4. Once it is lunch time, go ahead and add your dressing and then either stir to incorporate or put the lid back on and shake your salad until the dressing is evenly distributed.

Variations

Swap the sausage with diced chicken, sliced steak, chickpeas or whatever your favourite protein choice is.

    how many servings does this make? surely one is not going to be using 1/2 up of oil for one salad mix
