Grilled Vegetable Salad with Roasted Tomato Dressing
Directions
- Combine all of the dressing ingredients in a small or medium fry pan and heat on medium high until the tomatoes are wilted and soft (about 10 minutes).
- Now mash the tomatoes with the back of a fork and stir to combine.
- Grill your selection of veggies on medium high on the BBQ or under the broiler of your oven.
- Toss the veggies together in a mixing bowl and then plate up individually or on a platter and then drizzle with dressing. Now top with some or all of the selected garnishes and enjoy an amazing salad.
