Green Lentils

High in protein, fibre, folate and vitamin B1, lentils are one of the legume/grain to include in your diet. Easy to cook and very tasty, try adding lentils to your dishes today.

- Give the lentils a good rinse and then drain well.
- Bring water and salt to a boil and then add the rinsed lentils. Cover with a tight fitting lid and reduce heat to low. Simmer the lentils for 20-30 minutes depending on how you like them. 20 minutes will be quite firm where as 30 minutes will be much softer.
- Stain any excess water and use the lentils in stir-fry’s, soups or serve them on their own as part of dinner. Combine with your favourite protein and lots of veggies and dinner is done.
Variations
- You can use broth instead of water to bump up the flavour, but I like adding spices. Cumin, coriander, paprika, turmeric, chilli powder etc. Add in anywhere from ¼ to 1 teaspoon depending on your taste preferences and see what flavours you like best.
