Vegetable Broth

This is a basic vegetable broth and its tastes so much better than anything that you can buy pre-made from the store. Super easy and freezes nicely, its worth making your own for cooking rice and making soups!
Directions
- Combine all ingredients in a large pot. Bring to a boil and then reduce to a simmer.
- Simmer for about 1 hour and then take the pot off of the heat and cool. Once cool, strain the veggies and chill the broth in the fridge.
- Divide into smaller storage containers and once chilled, keep in the fridge for up to 7 days or freeze into smaller portions for convenient use in the future.
Variations
- You can also add different veggies to the broth like fennel, tomato and lemongrass for a totally different flavoured.
